You may generate any symbol you want in therion generally. But if the  
particular symbol is not yet defined somebody must do it. For example  
to start with new symbol set, let say "Mexican", and created (coded,  
programed) all necessary symbols in MetaPost. Temporary one may do it  
for user defined symbols in layout section.

As first step generate the list of all available symbols - see  
Appendix in TherionBook and check how to use symbols from different  
symbol sets in you map in layout section.
