What origin point do you mean? Altitudes in the map are displayed as a difference to grid-origin (set in layout). You need to probably set this one.

Amplitude = depth in cave. Do you want to change just the label displayed on the map?
A-B = Amplitude of cave (from high point to depth point) entrance - B = depth of cave (from entrance to depth) plan of cave: A 8 8 8 entrance 8 8 8 B
