I am not sure, but you should be able to install Therion and all the necessary dependencies through HomeBrew : https://brew.sh/
You will also probably need the Xcode-command lines tools (no need to install the complete XCode environment) if Homebrew do not install it. If needed you will find tons of website explaining how to install it.
To install Therion with Homebrew, follow then this wiki : https://therion.speleo.sk/wiki/os-tips:osx
(I am not sure that Therion is up-to-date with this method).
Personally, I generally install Therion from sources that I download from Github or from the Therion website. For that ,follow this page (do not take in account the « Preparation for old version 0.3.10!) : https://therion.speleo.sk/wiki/os-tips:osx10.8

Now I am using VS-codium (https://vscodium.com/), I find it more convenient than the other.
I installed the plugin for Therion : https://marketplace.visualstudio.com/items?itemName=rhystyers.therion / https://github.com/rhyst/vscode-therion-language. It works very well ! If I good remember, you will need to install it from file, you will not be able to install it directly through the marketplace (that only work with VSCode)

I am also on mac, I use the native Preview app. I like the fact that I can run compilation even if the pdf export is open in Preview. See https://therion.speleo.sk/wiki/contrib:externalviewers
