Hi Yann,
You can't override the colour of a specific label, but I had one project
where I wanted a subset of labels in a different colour. I created a copy
of the original label metapost to make a new user defined symbol (e.g.
u:label_warning) which could then be styled with a specific colour with the
symbol-colour command.
