Alright, I just submitted a pull request on GitHub as Rodrigo and Benedikt suggested. I updated the Italian translation for Therion and created one for Loch (using poedit, thanks Wookey!).
Please be patient, I tinkered with git before but I never actually made a contribution to a project, so I hope I did everything right!
If there are other Italian users on the list, please let me know if you notice any mistakes, I'll sort them out.

You can just send it here and someone will sort it out.

You should really also translate loch too, which needs a new
loch/locales/it/loch.po file. The easiest way to create that is run
poedit (you need the poedit package installed) and click on 'create
new translation', load up another (e.g the english one) and ask to
create 'italian'. Then fill in the translations and save.  and send us
the resulting loch.po file.

You can do all this by hand but the tool makes it easier unless you
are familiar with the process.
